Dang y’all. I’ve seen the hype for a while and then @meatchurch did a video for these bad boys so I figured I’d give them a shot. Bacon wrapped Oreos smoked on the @traegergrills . The salty/sweet combo is a real gamechanger. Heat the grill up to 250°. Wrap each Oreo in half a slice of bacon. We used your standard Double Stuffed Oreos and then tried some Maple Creme filled Vanilla Oreos. On both styles of cookies I tried three different rubs to see which one we liked the best ( @meatchurch Honey Hog, The Gospel, and @howtobbqright The BBQ Rub ). Threw them on the smoker for about 45 minutes until the bacon looked just right. Honey Hog was our favorite with The BBQ Rub a close second. Made some Bacon Beef ‘n Cheddar Potato Skins last weekend. Real tasty and super easy. Cooked the potatoes in the @traegergrills Timberline at 450° for about one hour (until soft when poked with a fork ). Sliced in half and then scooped out most of the potato. Brushed with butter and sprinkled on a little @howtobbqright The BBQ Rub and back on the grill for 5 minutes until golden brown. Loaded with ground beef, bacon, and cheddar and back on until the cheese melted. #Traeger #HowToBBQRight #Potato #Cheddar #Bacon #Beef #BBQ #kwSmokes

Pretzel Bun Bacon Cheeseburgers for #TraegerGameday . 1/3 lb. ground chuck patties topped with cheddar cheese, @kiolbassasmokedmeats Hickory Smoked Bacon, and crispy onion stings. Pretzel buns got a slather of mayo before getting toasted alongside the patties on the @traegergrills Timberline 850. Might be a southern thing to use mayo instead of butter but it sure is good. Wings and Bacon Wrapped Venison for #TraegerGameday Let the wings air dry in the fridge uncovered for 8 hours and then tossed them in some corn starch and @howtobbqright The BBQ Rub. Smoked them for 45 minutes at 375° (Flipping halfway through ). Finished off by tossing in some Buffalo Sauce. Brined the Venison for 6 hours, rinsed it clean, and patted it dry. Then I followed @howtobbqright ’s recipe for “Stuffed Venison Backstrap”. Used @meatchurch Holy Voodoo one one piece and @meatchurch Honey Hog on the other. Working on a Brisket Rub this weekend so I tested it out on a Chuck Roast (hella cheaper ) in case it didn’t turn out to great (Spoiler alert it turned out really good ). Smoked on the @traegergrills at 250° until 155° internal and then foil panned and covered until probe tender (about 205° internal on this guy ). One hour rest and shredded. Tasted great on its own. Really happy with the rub for a first run and only needs a few tweaks. But I decided to turn it up a notch and pile the beef high on a pretzel bun toasted with a little mayo, two slices of melted American cheese, sliced onion, and splashed with @oldbay_seasoning Hot Sauce for a Maryland kick. Been working on a few of my own BBQ rubs lately and decided to experiment on a giant pork loin we had. Took six chops and used 3 of them to test different variations on my Garlic Jalapeño rub and 2 with different versions of a classic BbQ rub on them. The last chop had some @chefphilsbbqsauce Datil Rump rub on it. The other half of the pork loin was covered with @howtobbqright The BBQ Rub to be sliced up for sandwiches this week. Slow smoked at 225° on the @traegergrills until an internal of 140° (the rest period brought them up to 145° which is perfect for pork ). Took some plain Pork Rinds, tossed them in Buffalo Sauce and @howtobbqright The BBQ Rub and smoked at 225° for 30 minutes on the @traegergrills . Had a couple of @omahasteaks burgers around so I decided to make a Patty Melt and whoa was it on point. Preheated the @traegergrills to 500° with a cast iron flattop on the bottom grate. While it was coming up to temp I prepped all the ingredients. Seasoned the burgers with @meatchurch Holy Cow and for an added kick, used @oldbay_seasoning Hot Sauce as a binder. Then cooked up a few slices of bacon and sautéed some chopped onions in the leftover bacon grease (hit them with @gibsonssteakhouse Seasoning Salt for an added kick of flavor ). Put the burgers straight on the grill grates to cook. Once they were about 5 degrees from finished I started to build the Patty Melt on the flat top. Took two slices of Sourdough and spread a little mayo on the outside (trust me when I say it’s better than using butter ). Put one slice on the flat top mayo side down, then layered mustard, bacon, chopped onion, one patty, cheese, second patty, more cheese, and finally the top slice of bread. Let it toast for about 3 minutes and then flipped the whole burger. Another 3 minutes and pulled it off. Took a shot at a recipe by @dennistheprescott today. His version calls for Smoked Paprika Chicken but I called an audible and tried to perfect my Garlic Jalapeño rub (it’s getting closer... ). Paired with some Garlic and Herb Potato Wedges and a killer Jalapeño Salsa. I figured I would somehow ruin the salsa because normally blenders and I don’t mix but it turned out great and it was super easy to make. Made a brisket while my parents were in town. Trimmed up the night before. Smoker preheated to 275° and rubbed it down with @meatchurch Holy Cow and Holy Gospel. Gave the rub about 20 minutes to sweat out and adhere and then on the @traegergrills Timberline 850 for about 6 hours until an internal temp of about 165° (but most importantly until the bark was a deep mahogany color ). Wrapped in butcher paper and back on the grill for another 5 hours until probe tender (about 205° internal ). Let it rest in my @yeti Roadie for 1.5 hours and then sliced it up. Definitely passed the bend and pull test but I gotta work on my slicing skills. #Traeger #MeatChurch #Brisket #Beef #BBQ #kwSmokes

Super easy French Bread Pizzas on the @traegergrills Timberline 850. Preheat grill to around 425°, spread a little olive oil on the sliced French Bread and toast cut side down for about 4-5 minutes (don’t do too long or the bread will get too hard ). Pull them off the grill and place on a sheet pan. Slather on some pizza sauce (or whatever you like as a base ) and top with your favorites. We used Pepperoni, @mikeshothoney , and Mozzarella. Put the pan back on the grill and after about 10-15 minutes the cheese will have melted and you’ll have some nice golden spots letting you know it’s time to eat. Be careful because those golden spots can turn to burn real quick (made that mistake a time or two ). It’s that easy! #Traeger #MikesHotHoney #Pizza #Pepperoni #FrenchBread #kwSmokes

Pork Belly Burnt Ends for @dluongo60 and @talibarone going away party. Cube up the pork belly into approximately 1”x1” cubes. Rub with @meatchurch Honey Hog and @blueshognation All Purpose (or whatever Pork rub you have on hand ). Smoke on the @traegergrills Timberline 850 at 275° until 195° internal (between 2-3 hours ). Place pieces into a foil pan and toss with a sweet BBQ sauce and some honey (We used Open Pit BBQ sauce and @mikeshothoney ). You want to use just enough to coat all the pieces. No need to drench them in sauce. Return to the grill for another 20-30 minutes or until the sauce has tacked up nicely. #Traeger #MeatChurch #PorkBelly #BluesHog #MikesHotHoney #BBQ #kwSmokes

The best thing about chicken is that it really pairs well with all different kinds of spices. Did some thighs 4 ways tonight. One with @chefphilsbbqsauce Datil Rump Rub, one with @meatchurch Holy Gospel and Honey Bacon BBQ, one with some Rivah Southern seasoning and last but not least one with a Garlic Jalapeño Rub I mixed up myself. That one has a ton of potential with a few tweaks! California Club Chicken Breasts for dinner last night. Pound the chicken breasts out to even thickness (about 1/2”-3/4” will work ) Season with @meatchurch The Gospel or your favorite BBQ rub. While the rub goes to work on the chicken, preheat your grill (anywhere from 350°-450° should work ) and cook the bacon. Bacon should be done to your likeness. We put the chicken on the @traegergrills Timberline and cooked to an internal temp of 165 then topped with Bacon, Avocado Slices, and Swiss Cheese.
